Grilled Chicken. Lime Cilantro Rice. Black Bean Salad with Avocados. Roasted Corn.

Grilled Chicken with Lime Cilantro Rice, Roasted Corn, and Chunky Black Bean Salad with Avocados.

Grilled Chicken
4 chicken breasts 
2 T soy sauce 
1 clove minced garlic 
1 tsp Cumin
1 T Mrs. Dash Fiesta Lime seasoning
1 T lime juice
Seasoning Salt & Pepper 
Foil to line grill

Place foil on the grill to prevent sticking.  Grill the chicken for 7-10 minutes over medium heat, or until juices ran clear. 

4 servings. 

Lime Cilantro Rice
1 cup brown rice 
1 handful cilantro, finely chopped 
T Mrs. Dash Fiesta Lime seasoning
1 1/2 T lime juice 
1/2 zest of one lime 

Cook brown rice according to directions. I used Minute Brown Rice. (You can also use white or premium rice.) Add in add ingredients and mix well. 

This is enough rice for 2 servings. 

Black Bean Salad with Avocados
1 can black beans, drained & rinsed 
2 small roma tomatoes, diced 
1/4 medium red onion, diced 
1/4 red pepper, diced 
1 ear roasted corn, cut off the knob 
( I roasted the corn on the grill for 10 minutes, or until grill marks appear. Turn the corn every few minutes)
2 green onions, chopped 
2 avocados, chopped 
1 handful cilantro, finely chopped 
1 T olive oil
1 T sugar 
1 juice from medium lime
1/2 zest from one lime
Seasoning Salt 

Combine all ingredients, except avocados. Use seasoning salt & sugar to taste. Add avocado, and then serve. This can be made the night before. However, add avocado just before servings. 
4 servings. 

I served all these recipes along with a ear of roasted corn.
