Turkey, veggies, & cheese omelet, red potato home fries, & cinnamon sugar toast


Red Potato Home Fries
3 red potatoes, washed and diced 
1/4 yellow onion diced 
1/4 red onion diced 
2 small jalapeños 
Pepper & seasoning salt to taste 
non-stick cooking spray


Preheat skillet with cooking spray over medium heat, place potatoes first and stir until tender. Then add onions and saute. Add the jalapeños towards the end. Cover with a glass lid & stir every few minutes. Entire process takes about 15 minutes. 

Turkey, Veggies, and Cheese Omelet
5 eggs
5 thin slices of turkey, chopped
1 small handful of spinach, chopped
1/8 yellow onion, diced 
1/2 cup shredded sharp cheddar cheese  
2 sliced of turkey bacon, cooked
1/2 roma tomato, diced  
1 small mushroom, diced 
Salt & Pepper to taste


Preheat medium skillet over low heat with non-stick cooking spray. Place eggs in small bowl. Using a fork break all of the yolks. Add a small amount of cold water to the mixture. (This makes the omelet light & fluffy! I learned this trick from my Mama!) Add in the S&P. 

Pour egg mixture into the skillet & let the mixture thicken up, increase heat to low-medium. This takes a few minutes. Next evenly add the turkey, veggies, and cheese to the omelet. 


This is what it will look like. 

Once the veggies start to cook flip one side of the omelet over. Allow that side to cook a minute or so, and then flip the omelet the other direction so that it folds over. Be cautious not to tear the omelet. 


You can top with a little more shredded cheese. 

Cinnamon & Sugar toast is one of my favorites with a omelet. Simply use a little butter on whole wheat bread. Then sprinkle cinnamon & sugar, and then toast in a toaster or the oven. Very quick and easy.

All of these ingredients are enough for two people.
Easy meal for brunch or dinner.
